Ingredients

Dough

  • 250 ml (1 cup) full cream milk, warmed
  • 10 g (2 teaspoons) instant yeast
  • 1 teaspoon sugar
  • 2 eggs
  • 500 g (4 cups) white bread (strong) flour
  • 1.5 teaspoons salt

Filling

  • 1 cup sundried tomatoes in oil (drained and finely chopped)
  • 2 cups grated mozzarella cheese
  • Large handful fresh basil (torn)
  • Salt & pepper, to taste

Garlic Butter

  • 100 g butter
  • 3 garlic cloves (crushed)
  • Squeeze of fresh lemon juice

Instructions

  1. Activate Yeast: Combine the warmed milk, instant yeast, and sugar in the bowl of a freestanding mixer and allow to stand for 5 minutes to activate the yeast.
  2. Mix Dough: Whisk in the eggs, then with the mixer running, gradually add the flour and salt. Mix for 5 minutes until the dough is well combined.
  3. Knead Dough: Remove the dough from the bowl and turn it onto a floured surface. Knead for 5-10 minutes until the dough becomes sticky and elastic.
  4. First Rise: Place the dough in an oiled bowl, cover with cling wrap, and let it rise for 1-2 hours until it has doubled in size.
  5. Prepare Baking Dish: Line an ovenproof casserole dish with baking paper to prevent sticking.
  6. Shape Rolls: Once risen, roll out the dough on a floured surface, spread the sundried tomatoes, mozzarella cheese, and torn basil evenly over it. Season with salt and pepper. Roll up the dough lengthwise into a log.
  7. Slice Rolls: Using a serrated knife, slice the rolled log into 3 cm wide pieces. Arrange the rolls cut side up in the prepared dish.
  8. Second Rise: Allow the rolls to rise again for 30 minutes at room temperature while preheating the oven to 180°C (356°F).
  9. Bake: Bake the rolls in the preheated oven for 20-25 minutes until they are golden brown and cooked through.
  10. Prepare Garlic Butter: While the rolls bake, melt the butter in a small saucepan with crushed garlic and a squeeze of fresh lemon juice to infuse flavor.
  11. Brush and Serve: Remove the baked rolls from the oven and brush liberally with the garlic butter. Let the rolls cool slightly before serving.

Notes

  • Ensure the milk is warm but not hot to avoid killing the yeast.
  • You can substitute sundried tomatoes in oil with dry ones rehydrated and tossed with olive oil.
  • The dough can be kneaded by hand if a mixer is unavailable, just increase kneading time to 10-15 minutes.
  • For a crispier bottom crust, bake on a preheated baking sheet instead of a casserole dish.
  • To store, keep leftover rolls in an airtight container and warm gently before serving.
