Ingredients

Sauce

  • 1/2 cup mayo
  • 1/3 cup sweet Thai chili sauce
  • 2 tablespoons tamari or soy sauce
  • 1 tablespoon ketchup
  • 1 clove garlic, grated

Meat Filling

  • 1 pound ground beef, chicken, or turkey
  • 2-3 tablespoons Gochujang (Korean chili paste)
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • Salt and black pepper, to taste

Sliders Assembly

  • 1 package (12 count) dinner rolls, halved lengthwise
  • 4-6 slices sharp cheddar cheese
  • 1 cup shredded spicy cheddar or pepper jack cheese
  • 1/4 cup dill pickles and/or pepperoncini, sliced

Garlic Butter Topping

  • 3 tablespoons salted butter, at room temperature
  • 4-6 cloves garlic, chopped
  • 1 tablespoon chopped fresh basil or parsley
  • 2 tablespoons grated parmesan cheese
  • 2 tablespoons sesame seeds

Instructions

  1. Make the special sauce: In a bowl, combine mayo, sweet Thai chili sauce, tamari or soy sauce, ketchup, and grated garlic. Stir well until smooth and set aside.
  2. Preheat the oven: Set your oven to 400°F (200°C) to prepare for baking the sliders.
  3. Cook the meat: Heat a skillet over medium heat and add the ground meat. Brown the meat thoroughly, breaking it up as it cooks. Once browned, stir in Gochujang, Worcestershire sauce, onion powder, garlic powder, and season with salt and black pepper. Cook for an additional 2-3 minutes to blend flavors. Remove from heat.
  4. Assemble the sliders: Line a baking sheet with parchment paper and arrange the bottom halves of the dinner rolls in a single layer. Layer the rolls with slices of sharp cheddar cheese, then spread the cooked meat evenly over the cheese. Drizzle about 1/3 cup of the special sauce over the meat, then sprinkle with shredded spicy cheddar or pepper jack. Top with sliced dill pickles or pepperoncini as desired.
  5. Prepare the garlic butter topping: In a small bowl, mix the softened salted butter with chopped garlic, fresh herbs (basil or parsley), and grated parmesan cheese until well combined. Spread this mixture evenly over the top halves of the rolls. Sprinkle the tops with sesame seeds.
  6. Bake the sliders: Cover the assembled sliders with tin foil and bake in the preheated oven for 10-15 minutes. Then remove the foil and bake for an additional 10-15 minutes until the cheese is fully melted and the tops are golden.
  7. Serve: Brush the sliders with any remaining garlic butter while hot, and serve immediately with extra special sauce on the side for dipping. Enjoy your cheesy, flavorful pull-apart sliders!

Notes

  • You can substitute ground chicken or turkey for beef to lighten the dish.
  • Gochujang amounts can be adjusted based on your heat preference.
  • Make sure the butter is at room temperature for easier mixing with garlic and herbs.
  • For a vegetarian version, substitute the meat with a plant-based protein and ensure sauces are vegetarian friendly.
  • These sliders are best served fresh but can be reheated in the oven to maintain texture.
