Ingredients

Crust and Topping

  • 1/2 cup (1 stick) butter, melted
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar, packed
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 3/4 cup old-fashioned whole-rolled oats (do not use quick cook or instant)
  • Pinch of salt

Filling

  • 1 cup raspberry preserves (seeded or seedless)

Instructions

  1. Prepare the Pan: Preheat your oven to 350°F (175°C). Line an 8×8-inch square pan with aluminum foil and spray with cooking spray. Alternatively, you can simply spray the pan directly.
  2. Melt Butter: In a large microwave-safe bowl, melt the butter by heating it for about 1 minute until fully melted.
  3. Mix Sugars and Vanilla: Whisk the granulated sugar, light brown sugar, and vanilla extract into the melted butter until well combined.
  4. Combine Dry Ingredients: Add the all-purpose flour, old-fashioned oats, and a pinch of salt to the wet mixture. Stir everything together until fully incorporated.
  5. Reserve Topping Mixture: Remove and set aside 1 heaping cup of the oatmeal mixture to use as the crumble topping later.
  6. Form the Crust: Press the remaining oatmeal mixture evenly into the bottom of the prepared pan, creating an even crust layer.
  7. Spread Raspberry Filling: Evenly spread the raspberry preserves over the crust. Make sure to cover the entire surface with a layer about 1/8 to 1/4 inch thick.
  8. Add Crumble Topping: Sprinkle the reserved oatmeal mixture evenly over the raspberry layer. For chunkier topping pieces, squeeze some of the mixture in your hand as you sprinkle it on top.
  9. Bake: Place the pan in the oven and bake for about 30 minutes, or until the edges are set, and the center is just set and lightly golden brown.
  10. Cool and Serve: Remove the pan from the oven and set it on a wire rack. Allow the bars to cool completely for at least 2 hours before slicing into squares and serving.

Notes

  • Use old-fashioned rolled oats, not quick or instant oats, for the best texture.
  • Allow the bars to cool fully to ensure they firm up well before slicing.
  • For chunkier crumble topping, squeeze some of the mixture in your hand during sprinkling.
  • Any type of raspberry preserves works, whether seeded or seedless.
  • Store leftover bars in an airtight container at room temperature for up to 3 days or refrigerate for longer freshness.
