This Rotel Chili recipe is a hearty, flavorful chili made with ground beef, Rotel tomatoes, tomato sauce, chili beans, and a perfect blend of spices. It’s a quick and easy dish ideal for warming up on a chilly day, with classic toppings like sour cream, green onions, and shredded Mexican cheese to customize your bowl.

Ingredients

Main Ingredients

  • 1½ pounds ground beef
  • 1 cup diced onion
  • 1 packet chili seasoning
  • 1 (10-ounce) can Rotel tomatoes, undrained
  • 1 (8-ounce) can tomato sauce
  • 1 (16-ounce) can chili beans
  • 1 (14.5-ounce) can diced tomatoes, undrained
  • ½ cup beef broth
  • ½ teaspoon black pepper

Toppings

  • Sour cream
  • Sliced green onion
  • Shredded Mexican cheese

Instructions

  1. Brown the beef and cook onions: In a Dutch oven, brown and crumble the ground beef over medium heat. Once the beef is broken apart, add the diced onion. Continue cooking until the onion is soft and the beef is fully cooked with no pink remaining. Drain off excess grease to reduce fat content.
  2. Add remaining ingredients and simmer: Pour in the Rotel tomatoes (with juices), tomato sauce, chili beans, diced tomatoes (with juices), beef broth, chili seasoning, and black pepper. Stir to combine thoroughly. Bring to a simmer and let cook for 10 minutes to meld the flavors. Taste and add salt as needed.
  3. Serve with toppings: Ladle the chili into bowls and top with sour cream, sliced green onion, and shredded Mexican cheese to your preference. Serve hot for a comforting and satisfying meal.

Notes

  • Drain the cooked ground beef to reduce grease and calories.
  • You can adjust the heat level by selecting mild or hot Rotel tomatoes.
  • For a thicker chili, simmer uncovered for a few extra minutes.
  • Feel free to substitute ground turkey or chicken for a leaner option.
  • Serve with warm cornbread or tortilla chips for a complete meal.
