Rotel Dip with Ground Beef is a creamy, cheesy, and flavorful appetizer perfect for game day or casual gatherings. Combining seasoned ground beef, Velveeta cheese, and zesty Rotel tomatoes and chilies, this easy stovetop dip delivers a deliciously smooth and spicy treat that pairs perfectly with tortilla chips.

Ingredients

Meat

  • 1 pound ground beef (preferably lean sirloin 93/7%)

Cheese

  • 16 oz Velveeta, cubed

Vegetables and Flavorings

  • 10 ounces Rotel tomatoes and chilies (choose Original, Mild, or Hot for desired spice level)
  • Taco seasoning (amount as preferred for 1 pound beef)

Instructions

  1. Cook the Ground Beef: Add the ground beef to a large skillet over medium-high heat. Season the meat with taco seasoning and cook until browned and fully cooked through, breaking up the meat as it cooks.
  2. Prepare the Cheese: While the beef is cooking, cube the Velveeta cheese into small pieces to ensure it melts evenly and quickly.
  3. Combine Ingredients: Once the beef is browned, drain any excess grease from the skillet to prevent the dip from becoming greasy. Add the cubed Velveeta and the can of Rotel tomatoes and chilies to the skillet with the beef. Stir thoroughly to combine all the ingredients.
  4. Melt the Cheese: Heat the mixture over medium heat, stirring frequently, until the Velveeta is fully melted and the dip is smooth and creamy.
  5. Keep Warm and Serve: Maintain the dip at a warm temperature on the stovetop to keep it melty and smooth while serving. Enjoy with tortilla chips or your favorite dipping snacks.

Notes

  • Use lean beef (sirloin 93/7%) to avoid a greasy dip.
  • If using fattier meat, be sure to drain the grease thoroughly before adding Velveeta.
  • For variations, try substituting ground turkey or ground chicken.
  • To increase heat, select a spicier Rotel variety, such as Hot.
  • If you want to avoid Velveeta, replace 16 oz of Velveeta with 8 oz of cream cheese and 8 oz of finely shredded cheddar cheese.
  • Store leftovers covered in the refrigerator for up to 3 days.
