This Dandelion Greens recipe offers a nutritious and flavorful way to enjoy this wild green vegetable. The greens are boiled until tender, then sautéed with golden onions and seasoned with cumin, sea salt, and a fresh squeeze of lemon juice for a delightful, slightly bitter side dish perfect for a healthy meal.

Ingredients

Ingredients

  • 2 bunches of dandelion greens, cut, washed well, and rinsed
  • 4 cups of tap boiled water (or enough to cover dandelion)
  • 1 medium-size chopped onion
  • ½ teaspoon cumin
  • 3 tablespoons extra virgin olive oil
  • ¼ teaspoon sea salt (adjust to taste)
  • 1-2 tablespoons lemon juice

Instructions

  1. Prepare the dandelion greens: Chop the dandelion greens thoroughly and wash them well to remove any dirt. Place them in a pot and pour in boiling water, covering the greens but leaving the pot uncovered.
  2. Boil the greens: Bring the pot to a boil, then reduce the heat to medium and allow the dandelion greens to cook for about 20 minutes, or until the leaves become soft and tender.
  3. Drain and cool: Drain the water from the pot and transfer the boiled dandelion greens into a strainer to cool down.
  4. Squeeze out excess water: Once cooled, use your hands to squeeze out any remaining water from the dandelion greens to prevent a soggy texture during sautéing.
  5. Sauté onions: In a separate pot, heat the extra virgin olive oil over medium heat and add the chopped onions. Sauté the onions until they turn golden brown and fragrant.
  6. Combine and season: Add the drained and squeezed dandelion greens to the pot with the sautéed onions. Stir in the cumin and sea salt, then cover the pot and cook together on low heat for an additional 10-15 minutes to allow flavors to meld.
  7. Serve: Turn off the heat and serve the dandelion greens warm or at room temperature, garnished with a fresh squeeze of lemon juice on top for brightness.

Notes

  • Adjust the amount of lemon juice based on your taste preference for acidity.
  • Ensure dandelion greens are washed thoroughly to remove any grit or soil.
  • Sea salt quantity can be adjusted or substituted with your preferred salt.
  • This dish pairs well with grilled meats or can be served as part of a vegetarian meal.
  • Use fresh extra virgin olive oil for the best flavor.
