Ingredients

Seafood

  • 1 1/2 lb sea scallops

Produce

  • 1 orange (zested and juiced)
  • 1 lemon (juiced)
  • 1 tbsp fresh ginger (grated)
  • fresh thyme (for garnish)

Dairy & Oils

  • 2 tbsp avocado oil
  • 2 tbsp butter (or ghee)

Seasoning

  • sea salt (to taste)

Instructions

  1. Prepare Scallops: Pat your scallops dry thoroughly with a paper towel to ensure a good sear, then sprinkle them evenly with sea salt to season.
  2. Sear Scallops: Heat the avocado oil in a sauté pan over medium-high heat until it is nearly smoking. Carefully place the scallops in the pan and sear them for about 1.5 to 2 minutes on each side until a golden crust forms. Remove scallops and set aside on a plate.
  3. Create Citrus Ginger Sauce: Reduce the heat to medium and add the freshly squeezed orange juice, lemon juice, orange zest, grated ginger, and butter to the same pan. Whisk continuously to combine and cook until the sauce begins to simmer and slightly thickens.
  4. Combine and Serve: Return the seared scallops to the pan and spoon the warm sauce over them to coat. Plate the scallops, drizzle additional sauce over the top, and garnish with fresh thyme sprigs before serving.

Notes

  • Patting the scallops dry is key to achieving a perfect sear and avoiding steaming.
  • You can substitute butter with ghee for a slightly nuttier flavor and dairy-free option.
  • Serve immediately for best texture and flavor.
  • Pair with steamed vegetables or a light salad for a full meal.
