Ingredients

Produce

  • 1 unit Lime
  • 1 unit Mini Cucumber
  • 4 ounce Grape Tomatoes
  • 4 ounce Mixed Greens

Meat

  • 10 ounce Ranch Steak

Condiments & Sauces

  • 2 ounce Sweet Thai Chili Sauce
  • 10 teaspoon Rice Wine Vinegar
  • 2 ounce Garlic-Ginger Scallion Paste
  • 1 unit Sesame Ginger Crunch (seasoning blend)

Oils & Fats

  • 2 tablespoon Olive Oil
  • 1 teaspoon Cooking Oil (such as vegetable or canola oil)

Seasonings & Toppings

  • 1 unit Crispy Fried Onions
  • ½ ounce Peanuts
  • teaspoon (tsp) Salt
  • teaspoon (tsp) Black Pepper

Instructions

  1. Prepare Produce: Wash and dry all produce thoroughly. Quarter the lime and set aside. Trim the mini cucumber, then thinly slice it into rounds. Halve the grape tomatoes for easy tossing later.
  2. Cook the Steak: Pat the ranch steak dry with paper towels and thinly slice it crosswise against the grain. Transfer the steak slices to a medium bowl and season with the sesame ginger crunch seasoning, a pinch of salt, and black pepper. Heat a drizzle of the cooking oil in a large nonstick pan over medium-high heat. Add the seasoned steak and cook, stirring occasionally, for 3-5 minutes until it reaches desired doneness. In the last minute of cooking, stir in the garlic-ginger scallion paste, half of the sweet Thai chili sauce, and the juice from one lime wedge to enhance flavor.
  3. Make the Dressing: While the steak cooks, whisk together rice wine vinegar, the remaining sweet Thai chili sauce, 2 tablespoons of olive oil, and juice from one lime wedge in a small bowl. This dressing will have a perfect balance of tangy, sweet, and savory notes.
  4. Assemble the Salad: In a large bowl, toss mixed greens, sliced cucumber, and halved grape tomatoes with as much of the prepared dressing as you like. Taste and adjust seasoning with salt and pepper as needed.
  5. Serve: Divide the dressed salad between shallow bowls or plates. Top each serving with the cooked steak slices. Garnish generously with crispy fried onions and peanuts for crunch. Serve with the remaining lime wedges on the side for an extra burst of fresh citrus if desired.
