Sheet Pan Nachos are a quick and delicious party favorite, loaded with seasoned ground beef, melted cheese, and fresh toppings. This easy recipe layers tortilla chips with flavorful beef and cheese, then bakes them to gooey perfection, perfect for game day or casual gatherings.

Ingredients

Meat & Seasoning

  • 1 Pound lean ground beef (85/15 or 90/10)
  • 1 Package taco seasoning
  • 1/2 Cup water

Base & Cheese

  • 1 13-ounce bag tortilla chips (thick, restaurant-style recommended)
  • 3 cups freshly shredded cheese (Cheddar, Monterey Jack, or Colby Jack)

Toppings

  • Roma tomatoes, seeded and diced
  • 1/2 Cup red onion, diced
  • Fresh cilantro, chopped
  • Jalapenos, sliced (to taste)
  • Black olives, sliced (to taste)
  • Sour cream (for serving)

Instructions

  1. Preheat & Prep: Preheat your oven to 400°F (200°C). Spray a large rimmed baking sheet with non-stick spray or line with foil for easy cleanup.
  2. Cook Beef: Brown the ground beef in a skillet over medium heat until fully cooked, breaking it apart with a spatula. Drain any excess fat thoroughly. Add the taco seasoning and water, then simmer for 3 minutes until the mixture thickens and becomes flavorful.
  3. Layer 1: Spread half of the tortilla chips evenly over the prepared baking sheet. Evenly distribute half of the cooked beef over the chips, then sprinkle half of the shredded cheese on top.
  4. Layer 2: Add another layer by spreading the remaining tortilla chips over the cheese, followed by the remaining beef and then the remaining shredded cheese, ensuring an even distribution for melting.
  5. Bake: Place the sheet pan in the oven and bake for 5-8 minutes, or until the cheese is fully melted and bubbly. For a perfectly golden top, you can broil for 1-2 minutes watching carefully to prevent burning.
  6. Garnish: Remove the nachos from the oven immediately and sprinkle diced Roma tomatoes, red onion, black olives, sliced jalapenos, and fresh cilantro on top. Serve with sour cream or your favorite dips alongside.

Notes

  • Use thick, sturdy tortilla chips to avoid sogginess and ensure they hold up under the toppings.
  • Feel free to customize toppings with guacamole, sliced avocado, or salsa for added flavor.
  • To make this dish vegetarian, substitute the ground beef with seasoned cooked beans or meatless crumbles.
  • Broiling the final step adds a nice browned cheese crust but watch carefully as it can burn quickly.
  • Leftover nachos can be refrigerated and gently reheated in the oven to maintain crispiness.
