Baked to perfection for a satisfying meal that serves eight, this casserole delivers a delicious blend of flavors and textures, ideal for family dinners or potlucks.

Ingredients

Vegetables

  • 1 large yellow onion, sliced
  • 2 large potatoes, peeled and sliced
  • 1 cup celery, chopped
  • 1 cup carrots, peeled and sliced

Meat and Grains

  • 1 lb lean ground beef, uncooked
  • ½ cup long grain rice, uncooked

Liquids and Seasonings

  • 1 can tomato soup (10.5 oz / 284 ml)
  • 1 can water (use tomato soup can for measurement)
  • Salt and pepper, to taste
  • Dried parsley, for garnish (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) ensuring it's ready for baking the casserole.
  2. Layer Ingredients: In a 9x13 inch casserole dish, arrange sliced onions first, followed by the sliced potatoes and then the lean ground beef. Evenly sprinkle the uncooked rice over the ground beef, then layer chopped celery and sliced carrots on top. Season everything with salt and pepper according to your taste.
  3. Prepare Sauce and Combine: In a small bowl, mix the tomato soup and one can of water thoroughly. Pour this mixture evenly over the layered ingredients in the casserole dish. Cover the dish tightly with aluminum foil to keep moisture intact while baking.
  4. Bake the Casserole: Place the covered casserole dish in the oven and bake for 1 hour and 30 minutes. This allows the rice to cook through and the flavors to meld beautifully.
  5. Cool and Garnish: Once baked, remove from the oven and let it cool for about 10 minutes. Garnish with dried parsley if desired before serving to add a fresh, herbaceous note.

Notes

  • Ensure the rice is evenly distributed to allow for uniform cooking.
  • You can substitute lean ground beef with ground turkey or chicken for a lighter version.
  • The casserole is best served warm and pairs well with a simple green salad.
  • Covering with foil is essential to prevent drying out during baking.
  • Check for seasoning before serving and adjust salt and pepper as needed.
