Sicily Salad is a refreshing and crunchy Mediterranean-inspired dish that combines crisp celery, briny green olives, and toasted almonds, all tossed in a tangy lemon and white wine vinegar dressing, then finished with a sprinkle of savory parmesan cheese. Perfect as a light side or a flavorful appetizer.

Ingredients

Salad Ingredients

  • 2 cups diced celery
  • 1 1/2 cups pitted green olives, roughly chopped
  • 2 tablespoons finely diced shallot
  • 1/2 cup slivered almonds
  • 1/3 cup grated parmesan

Dressing Ingredients

  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon white wine vinegar
  • Salt and pepper, to taste

Instructions

  1. Prepare the Salad: In a medium-sized bowl, combine the diced celery, roughly chopped green olives, finely diced shallot, and slivered almonds. Toss them together to mix evenly.
  2. Make the Dressing: In a small bowl, whisk together the olive oil, fresh lemon juice, white wine vinegar, salt, and pepper until the dressing is smooth and well emulsified.
  3. Toss Salad with Dressing: Pour the dressing over the salad ingredients and toss thoroughly to ensure everything is coated evenly with the dressing.
  4. Add Parmesan and Serve: Just before serving, sprinkle the grated parmesan cheese over the top of the salad to add a savory finish and additional texture.

Notes

  • Use fresh celery for the best crunch and flavor.
  • Adjust salt carefully since olives and parmesan already add saltiness.
  • For a nuttier flavor, lightly toast the slivered almonds before adding.
  • This salad is best served immediately but can be refrigerated for up to 4 hours if needed.
  • Can be enjoyed on its own or as a side dish for grilled meats or fish.
