This Simple One-Pot Chicken and Rice recipe is a comforting, flavorful meal that combines juicy, seasoned chicken thighs with perfectly cooked white rice. Made in a single skillet, it’s an easy and satisfying dinner perfect for busy weeknights.

Ingredients

Seasoning Mix

  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Main Ingredients

  • 2 pounds boneless chicken thighs
  • 1 tablespoon olive oil
  • 1 cup white rice
  • 2 cups chicken broth

Optional Garnish

  • Chopped cilantro (for topping)

Instructions

  1. Make the seasoning blend: In a small bowl, combine the smoked paprika, garlic powder, onion powder, salt, and black pepper. Mix it thoroughly to ensure even flavor distribution.
  2. Season the chicken: Place the boneless chicken thighs on a plate and sprinkle the prepared seasoning mix evenly over them, coating each piece well.
  3. Sear the chicken: Heat a large, deep skillet over medium heat. Add olive oil, then place the seasoned chicken thighs in the pan. Cook for about 4 minutes per side until nicely browned. Remove chicken and set aside.
  4. Cook the rice: In the same skillet, add the white rice and chicken broth. Scrape the bottom of the pan to loosen any browned bits for extra flavor. Bring the mixture to a boil.
  5. Simmer with chicken: Return the seared chicken thighs to the skillet on top of the rice. Reduce heat to low, cover the skillet, and let cook for 15 minutes until the rice is tender and chicken is cooked through.
  6. Serve: Garnish with chopped cilantro if desired and serve warm, enjoying the melding flavors of the one-pot meal.

Notes

  • You can substitute chicken thighs with chicken breasts, but cooking time may vary slightly.
  • For extra flavor, you can add diced onions or bell peppers when cooking the rice.
  • Ensure the skillet used has a tight-fitting lid for proper steaming of the rice and chicken.
  • Leftovers can be refrigerated up to 3 days and reheated gently.
