This Smoked Chicken Breast recipe delivers tender, juicy chicken with a rich smoky flavor using hardwood smoke and a simple blend of seasoning. Perfect for a flavorful, protein-packed meal, the chicken is smoked low and slow until perfectly cooked and juicy, then rested to ensure maximum tenderness and flavor.

Ingredients

Chicken

  • 4 boneless, skinless chicken breasts

Seasoning

  • 1-2 Tablespoons Hey Grill Hey Chicken Rub (or Lemon Herb Chicken Seasoning)
  • 2 Tablespoons olive oil

Instructions

  1. Preheat: Preheat your smoker to 225 degrees F. Use your favorite hardwood for smoking; combining oak with a fruitwood like cherry or apple adds a bold and balanced flavor to the chicken.
  2. Season: Drizzle the olive oil evenly over the chicken breasts and rub it in to coat all sides. Then, sprinkle the Chicken Rub evenly over each chicken breast, covering all sides thoroughly to ensure flavorful crust development.
  3. Smoke: Place the seasoned chicken breasts directly on the grill grates of the smoker. Smoke them for approximately 1 hour, or until the internal temperature at the thickest part of the chicken reaches 160 degrees F, ensuring they are cooked through but still juicy.
  4. Rest: Remove the chicken breasts from the smoker and tent them loosely with aluminum foil. Allow them to rest so the carryover heat raises the internal temperature to 165 degrees F, ensuring tender and safe-to-eat chicken.
  5. Dig in: Once the chicken has rested and reached the proper temperature, slice it, serve it immediately, and enjoy the smoky, flavorful results!

Notes

  • If you don’t have Hey Grill Hey Chicken Rub, you can use a Lemon Herb Chicken Seasoning as a substitute.
  • Using a combination of oak and fruitwoods for smoking enhances the flavor complexity of the chicken.
  • Be sure to check the internal temperature using a reliable meat thermometer to avoid undercooking or drying out the chicken.
  • Resting the chicken after smoking is crucial to retain its juices and ensure optimal tenderness.
  • This recipe is ideal for gatherings or meal prep as smoked chicken keeps well and can be served cold or reheated.
