A light and flavorful smoked salmon omelette enhanced with fresh herbs, capers, and crème fraîche. This quick and elegant breakfast or brunch dish combines fluffy eggs with the smoky richness of salmon, complemented by a touch of tangy lemon and fresh chives.

Ingredients

Egg Mixture

  • 2 large eggs
  • 1 tablespoon fresh herbs (preferably at least 2 or 3 different herbs such as parsley, tarragon, oregano, thyme, mint, chives)
  • ¼ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper

Toppings and Garnishes

  • 2 slices smoked salmon (preferably Nova)
  • ½ teaspoon capers
  • 1 teaspoon crème fraîche (or sour cream)
  • Chives (for garnish, optional)
  • Wedge of lemon

Instructions

  1. Prepare the egg mixture: In a small bowl, combine the eggs, fresh herbs, kosher salt, and freshly ground black pepper. Whisk thoroughly until the mixture is well combined and frothy, which helps to create a light and fluffy omelette.
  2. Heat the skillet: Place a small skillet over medium to medium-high heat and allow it to warm for about 30 seconds. Liberally spray the pan with vegetable cooking spray to prevent sticking.
  3. Cook the omelette: Pour the egg mixture into the hot skillet. Lift the skillet about 1–2 inches above the heat source and swirl it in a circular motion so the egg mixture coats the bottom and sides evenly. Using a spatula, gently pull the set edges of the omelette away from the skillet while tilting the pan to allow uncooked egg to flow into the gaps. Repeat this motion until the eggs are mostly cooked but still tender.
  4. Fold and serve: Remove the skillet from heat. Fold the omelette in half or into thirds by rolling it onto itself using the spatula. Slide the folded omelette onto a serving plate. Top with slices of smoked salmon, capers, and a dollop of crème fraîche. Garnish with chives if desired. Serve immediately with a wedge of lemon to squeeze over the top for extra brightness.

Notes

  • You can substitute crème fraîche with sour cream if preferred.
  • Feel free to adjust the amount and choice of fresh herbs based on availability and taste.
  • Use a non-stick skillet or a well-seasoned pan to ensure easy flipping and folding of the omelette.
  • For a dairy-free option, omit crème fraîche or replace with a dairy-free yogurt alternative.
  • Serve with toasted bread or fresh salad for a complete meal.
