Perfect for a light lunch or a healthy side dish, this salad is quick to prepare and customizable with optional seasonal fruit additions.

Ingredients

Dressing

  • 1/4 cup Red Wine Vinegar
  • 1/2 cup Olive Oil
  • 1 clove Garlic, minced
  • 1 tablespoon Dijon Mustard
  • 1-2 teaspoons Honey (to taste)

Salad

  • 1/2 medium Red Onion, sliced
  • 1/2 pint Cherry or Grape Tomatoes, sliced in half
  • 1/2 English Cucumber, sliced
  • 4 cups Spinach Leaves (whole or roughly chopped)
  • 1/4 cup Glazed or raw Walnuts, roughly chopped
  • Salt & Pepper, to taste
  • Feta Cheese, as desired

Optional Fruit Add-ins

  • Apples
  • Pears
  • Strawberries
  • Watermelon
  • Blueberries

Instructions

  1. Prepare the dressing: In a small bowl, whisk together the red wine vinegar, olive oil, minced garlic, Dijon mustard, and honey until fully combined. Alternatively, place all dressing ingredients in a sealable jar and shake vigorously to emulsify.
  2. Assemble the salad: In a large bowl, arrange the spinach leaves and toss them gently with some of the prepared dressing and the sliced red onions to evenly coat. This will ensure the spinach absorbs the flavors of the dressing.
  3. Add toppings: Sprinkle the roughly chopped walnuts and crumbled feta cheese atop the dressed spinach. Add the sliced cherry tomatoes and cucumber for freshness and additional texture. Season with salt and pepper to taste.
  4. Serve and customize: Offer any remaining dressing on the side for added flavor. For a sweet contrast, optionally add seasonal fruits such as apples, pears, strawberries, watermelon, or blueberries to personalize the salad to your taste.

Notes

  • The salad is highly customizable; feel free to add your favorite fruits or nuts for variation.
  • Using glazed walnuts adds a touch of sweetness and extra crunch to the salad.
  • To keep the salad fresh longer, store the dressing separately and combine just before serving.
  • For a vegan option, omit the feta cheese or substitute with a plant-based cheese alternative.
