A quick and flavorful Steak and Zucchini Stir Fry that combines tender sirloin with sautéed zucchini and onions, enhanced by a tangy coconut aminos and rice vinegar sauce. Ready in just 17 minutes, this dish makes a perfect nutritious weeknight dinner.

Ingredients

Meat

  • ¾ - 1 pound sirloin steak, thinly sliced
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Vegetables

  • 3 medium zucchini, sliced into half moons
  • ½ white or yellow onion, thinly sliced
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon ground ginger
  • ¼ teaspoon garlic powder

Sauces and Oils

  • 1 tablespoon olive or avocado oil (for steak)
  • 1½ tablespoons olive or avocado oil (for vegetables)
  • ¼ cup coconut aminos
  • 1 tablespoon rice vinegar

Instructions

  1. Cook the steak: Heat 1 tablespoon of olive or avocado oil in a large 12-inch skillet over medium-high heat until hot. Add the thinly sliced sirloin steak pieces, seasoned with ½ teaspoon salt and ½ teaspoon black pepper. Cook, stirring frequently, until the steak is browned but not fully cooked through, about 2 to 3 minutes. Remove the steak from the skillet and set aside, leaving any residual juices in the pan to enhance the vegetables.
  2. Sauté the vegetables: Reduce the heat to medium and add 1½ tablespoons of olive or avocado oil to the same skillet. Add the sliced zucchini and onion, then sprinkle with ½ teaspoon salt, ½ teaspoon black pepper, ¼ teaspoon ground ginger, and ¼ teaspoon garlic powder. Stir well and sauté, stirring occasionally, until the onion becomes translucent and the zucchini is tender, about 7 to 10 minutes.
  3. Create the sauce and combine: Pour in ¼ cup coconut aminos and 1 tablespoon rice vinegar over the sautéed vegetables. Return the cooked steak to the skillet. Stir everything together and cook for an additional 2 to 3 minutes until the steak is fully warmed through and the sauce evenly coats the ingredients. Garnish with sliced green onions or sesame seeds if desired before serving.

Notes

  • Use a large 12-inch skillet for best results to give ingredients ample space to cook evenly.
  • Adjust the seasoning and spices according to your preference; you can add fresh garlic or ginger for a more pungent flavor.
  • For a gluten-free option, coconut aminos is a great substitute for soy sauce.
  • Serve this stir fry over steamed rice, cauliflower rice, or enjoy it as is for a low-carb meal.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
