This delightful Strawberry and Goat Cheese Crostini recipe offers a perfect balance of creamy goat cheese and fresh, juicy strawberries on toasted baguette slices. Enhanced with a drizzle of honey, a splash of lemon juice, and fresh herbs, these crostinis are ideal for a light appetizer or a charming party snack.

Ingredients

Bread and Toppings

  • 1 baguette, sliced into 1/2-inch rounds
  • 1 tablespoon olive oil
  • Pinch of flaky sea salt

Strawberry Mixture

  • 1 pint fresh strawberries, hulled and thinly sliced
  • 1 tablespoon honey
  • 1 tablespoon lemon juice
  • Small handful of fresh basil or mint leaves, thinly sliced

Cheese and Garnish

  • 6 ounces goat cheese, at room temperature
  • Optional: balsamic glaze, for drizzling

Instructions

  1. Preheat the oven: Set your oven to 400°F to get it ready for toasting the baguette slices, which will form the base of the crostini.
  2. Prepare the bread: Lay the sliced baguette rounds on a baking sheet. Lightly brush each slice with olive oil and sprinkle with flaky sea salt to enhance flavor and texture.
  3. Bake the bread: Place the baking sheet in the oven and toast the slices for 7 to 8 minutes, flipping them halfway through the baking time. Remove once they turn golden and have a light crispness, then let them cool slightly.
  4. Make the strawberry topping: In a large bowl, mix the sliced strawberries with honey, lemon juice, and either freshly sliced basil or mint leaves. Allow this mixture to sit at room temperature to draw out the juices and create a flavorful topping.
  5. Assemble the crostini: Spread a generous layer of room-temperature goat cheese on each toasted baguette slice. Then, top each with 4 to 5 slices of the prepared strawberry mixture.
  6. Optional garnish and serving: Drizzle the crostini lightly with balsamic glaze or use some of the remaining strawberry mixture juices for extra flavor. You may also garnish with edible flower petals for an elegant presentation. Serve immediately to enjoy the fresh textures.

Notes

  • Allow the goat cheese to come to room temperature for easier spreading and better flavor.
  • For a vegan alternative, substitute goat cheese with a plant-based cheese spread.
  • Use fresh, ripe strawberries for the best taste and juiciness.
  • Balsamic glaze adds a tangy sweetness but is optional if preferred.
  • These crostinis are best served fresh to maintain the crisp texture of the toasts.
  • Fresh herbs like basil or mint can be adjusted based on preference or availability.
