Strawberry Balsamic Bruschetta is a delightful twist on the classic Italian appetizer combining fresh, juicy strawberries, aromatic basil, creamy ricotta, and a tangy balsamic glaze atop crispy toasted baguette slices. Perfect for summer gatherings or a fresh, elegant snack.

Ingredients

Bread and Toppings

  • 8-10 (½-inch) slices of French baguette
  • 1 tablespoon extra virgin olive oil
  • ½ cup whole milk or part skim ricotta cheese
  • Balsamic glaze, for drizzling (optional)

Strawberry Mixture

  • 1 ½ cups diced strawberries
  • 5 fresh basil leaves, thinly julienned, plus more for garnishing
  • ½ teaspoon kosher salt, divided
  • 1 tablespoon balsamic vinegar
  • Pinch of sugar (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 400 degrees Fahrenheit (204 degrees Celsius) to prepare for toasting the baguette slices to a perfect golden crisp.
  2. Prepare Strawberry Mixture: In a bowl, combine the diced strawberries, thinly julienned basil leaves, ¼ teaspoon of kosher salt, and balsamic vinegar. Stir well, then taste and add a pinch of sugar if you prefer a sweeter flavor. Let the mixture sit for at least 10 minutes to blend the flavors.
  3. Toast Baguette Slices: Arrange the baguette slices on a baking sheet. Brush the top of each slice lightly with extra virgin olive oil. Place them in the preheated oven and bake for about 10 minutes or until they become lightly golden and crisp.
  4. Prepare Ricotta Spread: While the bread toasts, mix the ricotta cheese with the remaining ¼ teaspoon of kosher salt to enhance its flavor.
  5. Assemble Bruschetta: Once toasted, dollop the salted ricotta onto each baguette slice. Spread the ricotta slightly towards the edges. Then, spoon the strawberry and basil mixture over the ricotta layer. Garnish with extra basil leaves and drizzle with balsamic glaze if desired for an added touch of sweetness and acidity.
  6. Serve: Serve the bruschetta immediately while the bread is still warm and crisp. This recipe yields 8-10 crostini and can be doubled for larger groups. Enjoy this fresh and flavorful appetizer!

Notes

  • Choose ripe but firm strawberries for the best texture and flavor.
  • The balsamic glaze is optional but adds a wonderful depth and sweetness; you can find it ready-made or reduce balsamic vinegar until syrupy.
  • If you prefer, substitute fresh basil with mint for a different but complimentary flavor profile.
  • Ricotta can be substituted with goat cheese or cream cheese for variation.
  • Toast the baguette slices just until golden to ensure they remain slightly crisp but not hard.
  • If you want to make the recipe vegan, use a plant-based cheese alternative and ensure balsamic glaze is vegan-friendly.
