Ingredients

Cake Batter

  • 1/3 cup coconut oil (or any other vegetable oil or butter)
  • 1 cup cream cheese
  • 1 ½ cups sugar (for the batter)
  • ¼ cup milk
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • ¼ teaspoon salt
  • 2 teaspoons baking powder

Topping

  • 1 ½ cups fresh strawberries (sliced)
  • ¼ cup sugar (for sprinkling)

Strawberry Sauce

  • 1 ½ cups fresh strawberries (diced)
  • ¼ cup sugar
  • 2 tablespoons water

Instructions

  1. Prepare Strawberry Sauce: In a medium saucepan over medium heat, combine the diced strawberries, ¼ cup sugar, and 2 tablespoons water. Cook while stirring occasionally until the strawberries break down and the sauce thickens slightly, about 7 to 10 minutes. Remove from heat and allow to cool.
  2. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (180°C). Line a 9x13 inch (24x34 cm) baking pan with parchment paper to prevent sticking and for easy cake removal.
  3. Mix Batter Ingredients: In a large mixing bowl, beat together the cream cheese, eggs, 1 ½ cups sugar, coconut oil, and vanilla extract until the mixture is smooth and creamy.
  4. Add Dry Ingredients: Fold in the all-purpose flour, salt, and baking powder using a spatula, combining gently until just mixed to avoid overworking the batter.
  5. Incorporate Milk: Stir in the milk and continue to mix until the batter is smooth and well combined.
  6. Assemble Cake: Pour the batter evenly into the prepared baking pan. Evenly spread the sliced strawberries on top of the batter, then sprinkle the remaining ¼ cup sugar over the strawberries to create a sweet topping.
  7. Bake the Cake: Place the pan in the preheated oven and bake for 30 to 35 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.
  8. Cool and Serve: Let the cake cool slightly in the pan before slicing. Serve each slice with a generous spoonful of the prepared strawberry sauce. Optionally, garnish with ice cream or whipped cream for extra indulgence.

Notes

  • Use fresh ripe strawberries for the best flavor in both the cake topping and sauce.
  • Do not overmix the batter to maintain a tender crumb.
  • The parchment paper lining helps with easy removal and cleanup.
  • For a dairy-free version, substitute cream cheese and milk with dairy-free alternatives.
  • Serve the cake warm with the strawberry sauce for a comforting dessert experience.
