Ingredients

Protein

  • 1 ½ pounds chicken breasts

Sauce and Marinade

  • ½ cup sweet chili sauce
  • ¼ cup soy sauce
  • 1 lime (juice only)

Vegetables

  • Green lettuce
  • 1 medium Daikon radish (shredded)
  • 1 cup diced cucumber
  • 2 cups shredded carrot
  • ½ red onion (sliced)
  • Sweet peppers (chopped)

Garnish and Wraps

  • Fresh cilantro (garnish)
  • 6 large tortillas or wraps
  • Sweet chili sauce (additional, for garnish)

Instructions

  1. Simmer the Chicken: In a medium pot over medium heat, combine the chicken breasts, ½ cup sweet chili sauce, ¼ cup soy sauce, and the lime juice. Cover and let the mixture simmer for 15-20 minutes, stirring occasionally, until the chicken is fully cooked through.
  2. Shred and Thicken: Once the chicken is cooked, shred it into chunks with two forks. Uncover the pot, reduce the heat to low, and allow the chicken to continue simmering so that the sauce thickens while you prepare the vegetables.
  3. Prepare the Vegetables: Wash and dry the green lettuce, shred the carrots and the daikon radish, dice the cucumber, slice the red onion, and chop the sweet peppers. Arrange all the prepared vegetables ready to assemble.
  4. Assemble the Wraps: Lay a few pieces of lettuce on a tortilla. Add a generous amount of the shredded chicken on top, ensuring to drain off any excess liquid from the pot. Layer on the shredded vegetables and a sprinkle of fresh cilantro. Drizzle additional sweet chili sauce to taste, then carefully roll up the wrap.
  5. Serve: Serve the wraps immediately for the freshest taste and best texture.

Notes

  • You can substitute chicken thighs for breasts if you prefer a juicier option.
  • To make this recipe gluten-free, use gluten-free soy sauce or tamari.
  • Feel free to add a touch of fresh chili or sriracha if you like more heat.
  • The wraps are best enjoyed fresh but can be wrapped tightly in foil and refrigerated for up to 24 hours.
  • Adding avocado slices can provide extra creaminess and nutrition.
