Ingredients

Salsa Verde

  • 2 tomatillos, roughly chopped
  • 4 ounces canned chopped green chiles, drained
  • 1 green onion, sliced thin
  • 2 Tablespoons fresh cilantro, roughly chopped
  • 1 ½ teaspoon granulated sugar
  • ¼ teaspoon ground cumin
  • ¼ teaspoon salt
  • ⅛ teaspoon ground black pepper

Pico De Gallo

  • 1 large Roma tomato, diced
  • 1 Tablespoon red onion, diced
  • 1 Tablespoon fresh cilantro, minced
  • ½ teaspoon lime juice
  • Salt and ground pepper to taste

Southwestern Sauce

  • ½ cup mayonnaise
  • 1 teaspoon white vinegar
  • 1 teaspoon water
  • ½ teaspoon granulated sugar
  • ½ teaspoon chili powder
  • ¼ teaspoon paprika
  • ⅛ teaspoon cayenne pepper
  • ¼ teaspoon onion powder
  • ⅛ teaspoon garlic powder

Corn Cakes

  • 1 ½ cups frozen sweet corn (divided)
  • ½ cup butter, softened to room temperature
  • 3 Tablespoons sugar
  • ⅛ teaspoon salt
  • ½ cup corn masa harina flour
  • 2 Tablespoons all-purpose flour
  • 1 ½ Tablespoons olive oil

Garnishes

  • Sour cream
  • Avocado, diced
  • Fresh cilantro, chopped

Instructions

  1. Make Salsa Verde: Combine all salsa verde ingredients (tomatillos, green chiles, green onion, cilantro, sugar, cumin, salt, and black pepper) in a food processor. Pulse until combined but still slightly chunky. Transfer to a small bowl, cover, and chill for at least 1 hour to allow flavors to meld.
  2. Make Pico de Gallo: In a small bowl, toss diced Roma tomato, red onion, fresh cilantro, lime juice, salt, and pepper. Cover and chill for at least 1 hour to develop fresh, bright flavors.
  3. Make Southwestern Sauce: Whisk together mayonnaise, white vinegar, water, sugar, chili powder, paprika, cayenne pepper, onion powder, and garlic powder in a small bowl until smooth. Cover and chill for at least 1 hour for the flavors to blend.
  4. Prepare Corn Cakes Batter: Place 1 cup of frozen corn into a food processor and pulse until coarsely pureed. In a medium bowl, combine the pureed corn with softened butter, sugar, and salt; mix well until fully incorporated.
  5. Add Dry Ingredients and Remaining Corn: Stir masa harina and all-purpose flour into the wet corn mixture until no flour streaks remain. Fold in the remaining ½ cup frozen corn kernels to evenly distribute.
  6. Shape Patties: Measure approximately ½ cup portions of batter and shape each into a 3-inch wide patty using your hands.
  7. Cook Corn Cakes: Heat olive oil in a large skillet over medium-low heat. Add patties and cook until the bottom side is golden brown, about 5-8 minutes. Flip and cook the other side until golden brown as well, another 5-8 minutes.
  8. Assemble and Serve: Serve the warm corn cakes topped or accompanied by a dollop of southwestern sauce, a spoonful of salsa verde, pico de gallo, sour cream, diced avocado, and fresh cilantro garnish for a complete and flavorful dish.

Notes

  • For best texture, do not over-puree the corn; keep some chunks for bite.
  • Cooking corn cakes over medium-low heat prevents burning while ensuring thorough cooking.
  • Chilling salsa verde, pico de gallo, and southwestern sauce ahead allows flavors to fully develop.
  • You can substitute mayonnaise with Greek yogurt for a lighter southwestern sauce.
  • Keep cooked patties warm in a low oven if making in batches.
  • Serve these tamale cakes as appetizers or a light meal with a fresh salad.
