A refreshing and vibrant peach salad combining fresh spinach, juicy peaches, creamy avocado, tangy feta cheese, crunchy pecans, and aromatic basil, all tossed in a homemade honey red wine vinegar dressing. Perfect as a light lunch or a side dish for warm-weather meals.

Ingredients

Salad Ingredients

  • 3 cups spinach, slightly chopped
  • 3 large peaches, sliced
  • 1 avocado, sliced
  • ¼ cup crumbled feta cheese
  • 2 tablespoons chopped pecans
  • ¼ cup fresh basil leaves, torn or chopped

Dressing Ingredients

  • ¼ cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon honey
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Make the dressing: In a small bowl, whisk together the olive oil, red wine vinegar, honey, salt, and black pepper until the dressing is smooth and well combined.
  2. Assemble the salad: Arrange the chopped spinach in a large salad bowl as the base. Layer the sliced peaches and avocado evenly over the spinach. Sprinkle the crumbled feta cheese and chopped pecans on top. Pour the prepared dressing over the salad and gently toss if desired. Finally, garnish with torn fresh basil leaves for added flavor and aroma.

Notes

  • Use ripe but firm peaches for the best texture and sweetness.
  • To prevent avocado browning, slice it just before serving and toss gently with the dressing.
  • For a nut-free version, omit pecans or substitute with roasted chickpeas.
  • This salad is best served fresh but can be refrigerated for up to 2 hours before serving.
