This flavorful Taco Dip is a layered appetizer featuring seasoned ground beef, refried beans, sour cream, and melted Mexican blend cheese, topped with fresh tomato and jalapeño slices. Perfect for parties and gatherings, it’s served warm with crunchy tortilla chips for dipping.

Ingredients

For the Meat Layer

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 1 lb. ground beef
  • 1 ounce taco seasoning mix
  • 2/3 cup water

For the Dip Base and Toppings

  • 15 ounces refried beans
  • 1½ cups sour cream
  • 1 cup shredded Mexican Blend Cheese
  • 1 tomato, diced
  • 1 jalapeño, diced or sliced
  • Tortilla chips, for serving

Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees Fahrenheit to prepare for baking the assembled dip.
  2. Prepare Baking Dish: Spray a 9-inch pie plate with cooking spray to prevent sticking.
  3. Sauté Onion: Heat olive oil in a large skillet over medium-high heat, then add the chopped onion and sauté until softened, about 4-5 minutes.
  4. Cook Ground Beef: Add ground beef to the skillet, cook thoroughly while breaking it apart, ensuring no pink remains.
  5. Drain Fat: Once cooked, drain excess fat from the skillet to reduce greasiness.
  6. Season Beef: Stir in taco seasoning and 2/3 cup water. Simmer the mixture for at least 5 minutes until flavors meld and the sauce thickens slightly. Remove from heat and let cool slightly.
  7. Layer Refried Beans: Spread refried beans evenly across the bottom of the prepared pie plate to create the base layer.
  8. Add Beef Layer: Spread the seasoned ground beef mixture evenly over the beans layer.
  9. Spread Sour Cream: Spread sour cream evenly over the seasoned beef layer.
  10. Top with Cheese: Sprinkle shredded Mexican blend cheese evenly on top.
  11. Bake: Place the pie plate in the preheated oven and bake for 15-20 minutes until the cheese has melted and the dip is heated through.
  12. Garnish and Serve: Remove from oven and garnish with diced tomato and jalapeño slices. Serve warm with tortilla chips for dipping.

Notes

  • You can substitute ground turkey or chicken for a leaner protein option.
  • Adjust the amount of jalapeño according to your preferred spice level or omit for a milder dip.
  • For a spicier flavor, add a dash of hot sauce to the seasoned beef before layering.
  • Use low-fat sour cream or Greek yogurt to reduce fat content without sacrificing creaminess.
  • Leftover dip can be reheated in the oven or microwave and served with chips or as a filling for burritos or tacos.
