Ingredients

Shrimp and Seasoning

  • 1 pound medium shrimp (peeled, tail removed, deveined)
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 1 teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • Pinch cayenne pepper
  • 1 teaspoon canola or olive oil (for coating shrimp)
  • 3 cloves garlic (minced)
  • 1 lime (zested and juiced)
  • ¼ cup cilantro (chopped)

For Cooking

  • 1 tablespoon canola or olive oil

For Assembly

  • 8 flour tortillas (warmed)
  • ½ cup cilantro (for garnish)
  • 1 cup charred salsa verde
  • 1 cup queso fresco (crumbled)
  • 1 lime (cut into wedges)
  • 1 avocado (sliced)
  • ¼ cabbage (thinly sliced)
  • 1 jalapeño (thinly sliced)
  • Pickled red onions (to taste)
  • Pico de gallo (to taste)
  • ½ cup sour cream

Instructions

  1. Season the shrimp: Place peeled and deveined shrimp in a bowl. Coat them evenly with 1 teaspoon of oil. Sprinkle kosher salt, black pepper, ground cumin, smoked paprika, and a pinch of cayenne pepper over the shrimp. Mix thoroughly to ensure all shrimp are coated with the seasoning blend. Set aside to marinate briefly.
  2. Cook the shrimp: Heat a pan over medium-high heat. Add 1 tablespoon of oil and allow it to heat until slick but not smoking. Add the shrimp to the pan in a single layer and cook for 1-2 minutes, until they just start turning pink. Using tongs, flip the shrimp and cook for an additional minute. Add minced garlic, lime zest, and lime juice to the pan, stirring constantly for about one minute to infuse the flavors. Remove from heat and mix in chopped cilantro.
  3. Assemble the tacos: Warm the flour tortillas. Place 4-5 shrimp onto each tortilla. Top with additional cilantro, charred salsa verde, and crumbled queso fresco. Add desired toppings like sliced avocado, thinly sliced cabbage, jalapeño, pickled red onions, pico de gallo, and a dollop of sour cream. Finish each taco with a squeeze of fresh lime juice.

Notes

  • Make sure not to overcook the shrimp; they should be tender and just pink.
  • Charred salsa verde can be homemade or store-bought for convenience.
  • Feel free to substitute corn tortillas for a gluten-free version.
  • Add more or less cayenne pepper depending on your preferred spice level.
  • For extra flavor, allow the shrimp to marinate for 10-15 minutes before cooking.
