Traditional Irish Boxty is a beloved potato pancake recipe combining both mashed and raw grated potatoes to create a deliciously crispy and tender dish. Perfect for breakfast or as a side, this recipe uses simple ingredients and a stovetop frying method to deliver authentic Irish comfort food.

Ingredients

Potato Mixture

  • 1 cup (250g) mashed potato (freshly made or leftovers)
  • 1 cup (250g) peeled and grated raw potato

Dry Ingredients

  • 1 ½ cups (220g) all-purpose flour (plain flour)
  • 1 teaspoon baking soda (bicarb of soda)
  • 1 teaspoon salt

Liquid

  • 1 cup (250ml) buttermilk (or 250ml milk with 2 teaspoons white vinegar or lemon juice stirred in and left for 5 mins)

For Frying

  • Butter or oil (for frying)

Instructions

  1. Prepare the grated potato: Wring the grated raw potato out in a clean tea towel to remove excess moisture and discard the starchy water. This step ensures the boxty has the right texture.
  2. Combine dry ingredients: In a mixing bowl, add the mashed potato, the dried grated potato, all-purpose flour, baking soda, and salt. Stir well to combine all the dry ingredients evenly.
  3. Add buttermilk: Stir in the buttermilk to the mixture to create a thick batter. The consistency should be thick but spoonable.
  4. Heat the pan: Place a frying pan over medium-low heat and heat a little butter or oil to coat the pan, preparing it for frying.
  5. Fry the boxty batter: Using a tablespoon, drop spoonfuls of the batter into the heated pan. Fry for about 5 minutes on each side, or until golden brown and cooked through. Flip carefully to cook both sides evenly.
  6. Keep warm if needed: If cooking in batches, keep the cooked boxties warm in the oven until all are ready to serve.

Notes

  • Wringing the grated potato removes excess moisture and starch, preventing sogginess.
  • Buttermilk can be substituted by milk mixed with vinegar or lemon juice to mimic acidity and tang.
  • Use medium-low heat to ensure the boxty cooks evenly without burning.
  • Boxty can be served with butter, sour cream, or a savory topping like smoked salmon or eggs.
