This Tzatziki Chicken Salad is a refreshing and flavorful dish combining creamy Greek yogurt tzatziki with tender rotisserie chicken, crisp cucumbers, radishes, and green onions, finished with crumbly feta and herbs. Perfect for a quick and healthy lunch or light dinner, it delivers Mediterranean-inspired flavors in just 20 minutes.

Ingredients

Tzatziki Sauce

  • 2 Persian cucumbers, peeled or 1 English cucumber
  • 1 cup whole milk Greek yogurt, unsweetened and unflavored
  • 2 tablespoons lemon juice (plus more to taste)
  • 2 cloves garlic, minced
  • 1 teaspoon Kosher salt
  • ¼ teaspoon black pepper
  • ¼ cup fresh dill (or parsley or mint), plus more as garnish

Salad

  • 4 cups rotisserie chicken
  • 2 Persian cucumbers, peeled and diced (or 1 English cucumber)
  • 4-5 radishes, sliced thinly (small)
  • 3 stalks green onions, sliced thinly including both green and white parts
  • ½ cup feta cheese, crumbled
  • 1 teaspoon sumac (optional)

Instructions

  1. Prepare the Cucumbers: Place a colander in a bowl. Shred the cucumbers using a box grater and place them in the colander. Using the back of a spatula or spoon, press out as much liquid as possible from the shredded cucumbers to avoid watery tzatziki.
  2. Make the Tzatziki Sauce: Transfer the drained shredded cucumbers to a large bowl. Add Greek yogurt, lemon juice, minced garlic, kosher salt, black pepper, and fresh dill. Stir thoroughly to combine all ingredients. Taste and adjust seasoning with additional salt, pepper, or lemon juice as desired.
  3. Combine the Salad Ingredients: Add the cooked rotisserie chicken, diced peeled cucumbers, thinly sliced radishes, and chopped green onions to the bowl with the tzatziki sauce.
  4. Mix the Salad: Gently fold all ingredients together, ensuring the chicken salad components are evenly coated with the tzatziki dressing without breaking up the chicken pieces unnecessarily.
  5. Garnish and Serve: Sprinkle crumbled feta cheese over the top of the salad. Add sumac if using and garnish with additional fresh herbs such as dill, parsley, or mint for a vibrant presentation.

Notes

  • Pressing the cucumbers after shredding is key to avoid a watery tzatziki sauce.
  • Use a good quality Greek yogurt that is thick and creamy for authentic texture.
  • Fresh herbs like dill, parsley, or mint can be used based on preference or availability.
  • Sumac is optional but adds a nice tangy depth if you choose to include it.
  • This salad can be served chilled or at room temperature.
  • Rotisserie chicken makes this recipe quick and easy; leftover cooked chicken works well too.
