A delightful vegan dessert featuring crispy tortilla nachos coated with cinnamon sugar, topped with rich coconut coffee ice cream, light chocolate syrup, and fresh strawberries or whipped coconut cream. This quick and easy recipe offers a perfect blend of sweet and crunchy textures, ideal for any occasion.

Ingredients

Tortilla Nachos

  • 3-4 large whole grain, white, or gluten-free brown rice tortillas
  • 2-3 tsp cinnamon sugar
  • Avocado oil or other oil, for coating

Toppings

  • 2-3 scoops coconut coffee ice cream (or other vegan ice cream)
  • 2-3 Tbsp light chocolate syrup or vegan hot fudge
  • Whipped coconut cream and/or strawberries for topping

Instructions

  1. Preheat the Oven: Turn your oven to low broil and position a rack in the top one-third of your oven, preparing for quick broiling of the tortillas.
  2. Prepare Tortillas: Cut the tortillas into triangles and place them on two lightly greased baking sheets. Lightly coat the tortilla pieces with avocado oil or your preferred oil to help crisp them up evenly.
  3. Add Cinnamon Sugar: Sprinkle 2-3 teaspoons of cinnamon sugar over the tortilla triangles. Toss gently to ensure each piece is evenly coated, and add more cinnamon sugar if needed for extra flavor.
  4. Broil the Nachos: Arrange the coated tortilla triangles in a single layer on the baking sheets. Broil for about 1-3 minutes on each side, carefully watching to avoid burning since they crisp up quickly. Typically, it takes about 2 minutes per side to achieve a golden, crispy texture.
  5. Assemble Dessert: Once the tortilla nachos are crisp and golden, remove them from the oven and transfer to a large serving plate. Top generously with scoops of coconut coffee ice cream, drizzle with light chocolate syrup or vegan hot fudge, and garnish with whipped coconut cream and/or fresh strawberries. Serve immediately for the best texture and flavor.

Notes

  • Watch the tortillas closely while broiling as they can burn quickly.
  • Use gluten-free tortillas to make this dessert gluten-free if desired.
  • Coconut coffee ice cream can be replaced with any vegan ice cream flavor you prefer.
  • For a nutty flavor, consider lightly sprinkling chopped nuts as an additional topping.
  • This dessert is best served immediately after assembly to prevent the nachos from becoming soggy.
