These Viral Baked Dumplings are a flavorful one-pan meal featuring dumplings baked in a rich, coconut cream-based curry sauce. Infused with ginger, garlic, red curry paste, and a hint of sweetness from maple syrup, this easy-to-make recipe combines convenience with vibrant Asian-inspired flavors, perfect as a main dish over rice or a delicious appetizer.

Ingredients

Sauce

  • 1 ⅔ cups (400 ml) Coconut Cream
  • ½ teaspoon powdered ginger
  • 4 cloves Garlic (minced)
  • 3 Tablespoons Maple Syrup
  • 3 Tablespoons Soy Sauce
  • 3 Tablespoons Apple Cider Vinegar (ACV)
  • 1 ½ Tablespoons Red Curry Paste

Main

  • Handful of Spinach
  • 24 Dumplings or Potstickers
  • 1 teaspoon Sesame Oil

Optional Garnishes

  • Crispy Chili Oil
  • Chives
  • Sesame Seeds
  • Seasoning Packet from Potstickers

Instructions

  1. Preheat and Prepare Sauce: Preheat your oven to 400°F (200°C). In a large 9x13-inch casserole dish, combine the coconut cream, powdered ginger, minced garlic, maple syrup, soy sauce, apple cider vinegar, and red curry paste. Whisk these ingredients together thoroughly until the sauce is smooth and well blended.
  2. Add Spinach and Dumplings: Spread a handful of fresh spinach evenly over the sauce in the casserole dish. Arrange the 24 dumplings or potstickers on top of the spinach in a single layer to ensure even cooking.
  3. Bake Covered: Cover the casserole dish tightly with aluminum foil to lock in moisture. Bake in the preheated oven for 25 minutes, stirring gently halfway through to prevent sticking and to evenly distribute the sauce.
  4. Uncover and Finish Baking: Remove the foil and continue baking for an additional 5 to 10 minutes, until the sauce is bubbling and the dumplings are beginning to brown slightly on top, indicating a delicious crispness.
  5. Serve: Drizzle with 1 teaspoon sesame oil and optional crispy chili oil, sprinkle with chopped chives and sesame seeds if desired. Serve warm over rice with roasted broccoli for a complete meal, or enjoy as a flavorful appetizer.

Notes

  • You can substitute dumplings with frozen potstickers of your choice; cooking times may vary slightly.
  • For a spicier dish, add more red curry paste or use a spicier chili oil garnish.
  • If you do not have coconut cream, canned coconut milk may be used but the sauce will be thinner.
  • Stirring halfway through baking ensures dumplings don't stick and flavor distributes well.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
