A refreshing and light Watermelon Salad with Feta and Cucumber, perfectly balanced with a zesty lime-honey dressing and fresh mint. Ideal for a quick summer side dish or a healthy snack, this salad combines juicy watermelon cubes, crunchy cucumbers, and salty feta cheese for a vibrant and delicious salad that takes only 20 minutes to prepare.

Ingredients

Salad

  • 5 cups watermelon, cubed
  • 2 large cucumbers, peeled, sliced, and quartered
  • 1 ¼ cups feta cheese, cubed
  • 2 tablespoons fresh mint, finely chopped

Dressing

  • 1 tablespoon extra virgin olive oil
  • 1 lime, juiced (about 2 tablespoons juice)
  • 1 teaspoon honey

Instructions

  1. Make the dressing: In a small bowl, whisk together the extra virgin olive oil, freshly squeezed lime juice, and honey until well combined and smooth.
  2. Combine the salad ingredients: In a large salad bowl, add the cubed watermelon, peeled and quartered cucumber slices, and finely chopped fresh mint. Pour the dressing over the salad and gently toss to evenly coat the ingredients.
  3. Add the feta cheese: Gently fold in the cubed feta cheese into the salad, taking care not to break the cheese pieces. Add additional fresh mint leaves if desired for garnish.

Notes

  • For a more vibrant flavor, chill the watermelon and cucumbers before assembling the salad.
  • Use good quality feta cheese for the best texture and taste.
  • This salad is best served fresh but can be stored covered in the refrigerator for up to 1 day.
  • To make it vegan, substitute feta cheese with a plant-based cheese alternative.
  • Adjust the honey and lime juice amounts according to your preferred balance of sweetness and acidity.
