Ingredients

Vegetables

  • 1½ cups zucchini (250 grams), chopped to ¼ inch thickness
  • 1 small onion, sliced thin
  • ½ cup bell peppers, sliced thin
  • ¾ tablespoon garlic, chopped (about 1 clove)
  • ½ teaspoon ginger, chopped (optional)

Sauce & Seasonings

  • 1¼ tablespoons oil (sesame or olive oil)
  • 1 teaspoon soya sauce (or tamari, hoisin sauce, or vegetarian mushroom sauce)
  • 1 teaspoon vinegar (rice vinegar or apple cider vinegar)
  • ¾ teaspoon black pepper (or steak seasoning or ½ teaspoon garam masala)
  • 1 teaspoon toasted sesame seeds (or 2 tablespoons roasted and crushed peanuts)

Instructions

  1. Preparation: Rinse all the vegetables thoroughly. Slice the onions and bell peppers thinly. Chop the zucchini to about ¼ inch thickness. Also, finely chop the ginger and garlic.
  2. Heat Oil and Fry Aromatics: Pour the oil into a hot pan and add the chopped ginger and garlic. Stir fry for about 30 seconds until fragrant but not browned.
  3. Cook Onions and Peppers: Add the sliced onions to the pan and fry until they turn transparent. Then add the bell peppers and stir fry for another 30 seconds.
  4. Stir Fry Zucchini: Add the chopped zucchini to the pan and stir fry on high heat until the zucchini is half cooked but still crunchy. Avoid overcooking as zucchini can become mushy.
  5. Add Sauces and Seasonings: Pour in the soya sauce and vinegar. Sprinkle the black pepper (or alternative seasoning). Stir fry for an additional 30 to 60 seconds to combine flavors.
  6. Finish and Serve: Turn off the heat and sprinkle toasted sesame seeds or roasted crushed peanuts over the stir fry. Taste and optionally add salt if needed. Serve immediately as a side dish or use in wraps and sandwiches.

Notes

  • For a different spice profile, substitute black pepper with steak seasoning or ½ teaspoon garam masala.
  • You can use tamari or vegetarian mushroom sauce as soy sauce alternatives to suit dietary preferences.
  • Ensure zucchini is not overcooked to maintain a pleasant crunchy texture.
  • To make this dish vegan and vegetarian, use suitable soy sauces and avoid sauces containing animal derivatives.
